Here’s a healthy meal prep idea: Shrimp and Coconut Stirfry!
Chicken Orzo
Chicken Marinade
1 ½ lbs chicken breast diced
2 tablespoon chili garlic paste
½ tablespoon ancho chili powder
Kosher salt and pepper TT
1 tablespoon EVO
Reserve half the herbs for cooking and the other half for garnishing
2 tablespoons parsley
3 tablespoons green onion
Cooking Orzo
Pot of hot liquid for adding into the orzo (cauliflower water can be used, please cook orzo until al dante)
2 cups dried orzo
3 tablespoon diced onion
1 teaspoon thyme
½ sweet red pepper (small diced)
½ sweet green pepper (small diced)
1 Roma tomatoes (small diced)
1 tablespoon garlic chili paste
1 tablespoon tomato paste
Garnishing Orzo
1 green sweet bell pepper (medium diced)
1 red sweet bell pepper (medium diced)
2 Roma tomatoes (medium diced)
2 tablespoon parsley chopped
2 tablespoon chopped green onion
Cauliflower Broccoli
1 head Cauliflower florets
2 bunches broccoli florets
1 small pot of water for blanching veg
1 teaspoon turmeric (for blanching cauliflower)
Small pot of boiling water for blanching
SS bowl with ice and cold water for an ice bath
Kosher salt for seasoning hot water (not too much salt just a pinch)
EVO and season with kosher salt and pepper
Spinach
Cello spinach
Small drizzle EVO
